Tilapia in Lemon Caper Sauce

Seasoned with lemon pepper.

This is in the pan—I forgot to take pictures of the frying process (I’m new to this, sorry…)

 

I’m sure you know how to fry fish. right??

Tilapia in Lemon Caper Sauce

2 to 4 pieces Tilapia

Juice of 1 lemon

¾ C chicken broth

¼ C capers, rinsed

Lemon pepper

1 Tbs olive oil

2 Tbs butter or margarine

1Tbs flour

flour to dredge the fish in

Heat oil and 1 Tbs of butter in frying pan on medium high heat. Wash and pat dry fish. Season with lemon pepper and dredge in flour. Fry until nicely brown on each side, don’t over cook! Remove from pan and wipe pan out. Add chicken broth, lemon juice, capers and simmer. Melt 1 Tbs butter, add 1 Tbs flour to it and mix thoroughly add to the broth mixture to thicken. When incorporated and smooth return the fish to the pan and heat through.

I love tilapia, but have not had good luck cooking it myself. i will try your recipe and let you know how it goes! Sounds delicious.
