Sweet Potatoes with Dried Cranberries

SO simple! A few ingredients, big flavor!

Quarter the sweet potatoes then dice in half inch cubes.

After a pre-cook in the microwave add the ruby colored cranberry gems.

Mix in the almonds and pumpkin pie spice.

Dot with butter or margarine and bake it!

Sweet, delish and good too!


Sweet Potatoes with Dried Cranberries

Serves 4

Prep time 15 minutes

cook time 30 minutes



2 Medium Sized Sweet Potatoes

1 C Dried Cranberries

1 C Sliced Almonds

¼ C Brown Sugar

2 teas Pumpkin Pie Spice

3 Tbls Butter or Margarine

Salt and Pepper to Taste


Peel and quarter the sweet potatoes lengthwise. Dice in ½ inch cubes. Preheat oven to 350* Put sweet potatoes into a greased microwave/oven safe dish. Cover with a moist paper towel, microwave for 5 minutes, stir and microwave for another 5 minutes. Mix the brown sugar and pumpkin pie spice together.  Add sugar and spice mixture along with the cranberries and almonds into the sweet potatoes, stir, salt and pepper to taste. Dot with the margarine and bake at 350* for 30 minutes.
