Rosemary Garlic Chicken with Couscous

SOOooo, easy!

 

Chop up the garlic and rosemary.

 

Then mash it with the salt using a fork.

 

Toss it in a bowl with the juice of the lemon, extra virgin olive oil and lemon pepper.

 

Pour it over the chicken breasts.

 

Bake it!

 

Eat it! Way yummy!

I served it on a bed of whole wheat couscous with sautéed onion and yellow bell pepper, delish!!

 

 

Rosemary Garlic Chicken

2 boneless skinless chicken breasts

1 lemon

3 large cloves of garlic

1 Tbs chopped fresh rosemary

2 Tbs extra virgin olive oil

½ teas salt

1 teas lemon pepper

 

Preheat oven to 375. Mince the garlic and the rosemary then mash it with the salt using a fork. Put it in a little bowl with the juice of the lemon, oil and lemon pepper. Pour over the chicken breasts and bake covered for 20 minutes then uncovered until nicely brown and fork tender.

Whole Wheat Couscous with Onion and Yellow Bell Pepper.

1 C whole wheat couscous

1 ¼ C Chicken broth

1 sweet onion-diced

1 yellow bell pepper-diced

 

Bring the broth to a boil in med size sauce pan. Add the couscous, stir and cover. Remove from heat and let stand for 5 minute, fluff with fork.

In a large frying pan on medium heat sauté the diced onion and bell pepper in 1 Tbs olive oil until the onion is light brown. Add the couscous to the frying pan and heat through. If the couscous is too dry you can add a little water. Enjoy!
