Roasted Tomato Salsa


Yummo! This is so great on eggs for breakfast, my honey’s favorite!!

Salsa isn’t just a dance!

But when I cook you know I love to, dance that is!

Hey, I’m making salsa, I HAVE to  listen to Santana!!


The goodness that will become

amazing salsa!!

Broil tomatoes, jalapeños, onion and garlic on high,

but not too close to the element until it is

roasty toasty.

Core and peel the tomatoes and the jalapeños

Toss everything in to a processor and

WHIRRRR away!!!


Roasted Tomato Salsa

8 roma tomatoes

1 sweet onion

2 jalapeños

3 to 4 cloves garlic

1 bunch cilantro (1 loosely packed cup)

1 lime

½ lemon

½ teas ground cumin

½ teas salt

¼ teas pepper

1 Tbs olive oil

Preheat broiler. Wash and place tomatoes, onion (quartered) jalapeños and garlic on a cookie sheet. Place about 5 inches from the element. Broil until charred here and there—LOL!!

Allow to cool so the tomatoes and jalapeños can be peeled and cored (just the hard part of the tomatoes needs to be removed)

Once peeled and cored put in the processor with cilantro, garlic, the juice of the lime and lemon, and the seasonings.

Whirrrrr away! Process until you get the texture you like. Taste for seasoning.
