Mozzarella Feta Bites

I had left over ready to bake pie crust, which means I HAD to do something with it. This is what I did.

I sliced up some onion and sautéed it until it was caramelized.

For good measure I tossed in some minced garlic.

 

While the onion was cooking I got busy with a martini glass….

Unfortunately there was no vodka in it….

It did cut the pie dough just the right size though.

I filled those little cups with a slice of mozzarella, the caramelized onions, feta cheese, fresh basil, a slice of roma tomato and baked em up!

 

Mozzarella Feta Bites

 

2 ready to use pie crusts

1 sweet onion sliced

3 cloves garlic minced

6 oz Feta cheese

2 large balls fresh Mozzarella cheese

2 Roma tomatoes

fresh basil

Preheat the oven to 450*

Slice the onion and sauté in 1 Tb extra virgin olive oil. While the onion is cooking cut the pie crust to fit in an ungreased muffin tin. You can use a large or small muffin tin it depends on how big you want your bites. Fork holes in the bottom of the pie crust cups once they are in the muffin tin. Bake for 8 to 10 minutes until the edges are light brown.

When the onion is nice and caramelized add the minced garlic cook another minute or so.

Slice the Mozzarella cheese in ¼ inch slices and put into the bottom of the pie crust cup, next is a spoonful of the onion, then some Feta cheese, topped with a bit of the minced basil, a ¼ inch slice of tomato and top with a bit more of the Feta. Bake another 8 to 10 minutes or until the cheese is nice and brown.
