Mothers Day Brunch Ideas
Fresh and Fruity, Light and Easy!
Aw, Mothers Day **sigh** I’m a mom, it touches MY heart, soooo, time to cut to the chase~~~Here’s the for real, in your face, what up truth….
You have a mom? You love your mom—almost guaranteed she loves you back. **wink wink**
Card…Good for long distances.
Flowers…nice…better than just a card.
Brunch out…getting better.
But….
How about this? Take a bit of time and prepare her brunch. It is so easy to do. Mix and match…add some bacon, it’s all GOOD!!! BTW—LOVE BACON!!! Tip for cooking bacon later.
You’ll be sending a wonderful, delicious message—-I LOVE you mom. Thank YOU for being you, and putting up with and loving me. Let mom know she’s loved and appreciated by taking the time to show her.
Here are some simple ideas for a wonderful mothers day brunch…Fresh and fruity, light and easy!
Fresh Minty Fruit Salad
serves 4
prep time 15 minutes
1 Kiwi peeled quartered and sliced
2 C Seedless Grapes
1 Pint Strawberries, sliced
1 Pint Blueberries
1 ½ teas minced fresh mint
½ C Peach Preserves
Slice, dice and mix—SOOOOO GOOD! If you don’t like mint, don’t want to buy mint—it’s ok, great without it.
This is the GO-TO casserole! Really….I can eat the whole friggin thing and it’s SOOOOOO EASY!!!
Creamy Cheesy Hash Brown Casserole
Serves 4 (or me)
Prep and cook time 1 1/4 hour
4 C thawed Hash Browns (1 LB)
1/2 C Diced Onion
1 can Cream of Celery Soup
8 oz Sour Cream
8 oz Shredded Cheddar Monterey Jack Cheese blend (or just cheddar)
¼ teas Pepper
¼ teas Salt
Preheat oven to 350* Mix all this up—SIMPLE!! Spray an 8×8 baking dish with vegetable spray and plop it all in there, even it out and bake for 1 hour….OMG!!! REALLLY!!!
Easy Yummy Strawberry Parfait
Strawberry Yogurt
Granola
Fresh strawberries
Layer the granola, yogurt and strawberries in a wine glass or something clear and pretty. SIMPLE!!!
Baguette Cinnamon French Toast
Serves 4
prep and cook time 30 Minutes
1 Baguette (French bread)
4 eggs
¼ C flour
¼ C Milk
½ teas cinnamon
¼ C powdered sugar
½ pint sliced strawberries
1 Tbls margarine or butter
Preheat a large frying pan on medium high. Melt the butter in it.
Whisk together the milk and flour. Add the eggs. Cut the French bread baguette diagonally in ½ in pieces. Dip into the milk egg mixture. Fry in the butter until golden brown and yummy. Top with sliced strawberries and dust with powdered sugar.
Lastly…
German Pancake with Raspberries and Blueberries—YUM!!
Yield 2 9-inch pancakes.
4 eggs
1 tablespoon sugar
1/2 teaspoon salt
2/3 cup flour, sifted
2/3 cup milk
2 tablespoons soft butter
1/2 C Blueberries and Raspberries
Powdered Sugar for dusting
Heat oven to 400°F. Butter two 9-inch cake pans well. Put eggs in blender container, cover blend until light yellow in color, add remaining (except the berries ) ingredients; process until smooth. Pour into prepared pans and bake 20 minutes; then reduce heat to 350°F and bake 10 minutes. Slide onto hot plates. Dust with powdered sugar, top with your choice of fresh berries.
This is an easy recipe to cut in half, reduce ingredients by half, bake in a pie plate–FAB!
Tip—to cook bacon without the mess and splatter of frying it. Bake it! Seriously…
Preheat oven to 415* cover a rimmed cookie sheet with foil and lay the slices of bacon on it. Bake for 10 minutes, flip the bacon and cook until crispy or to your liking.

What a lovely array of dishes – my favourite is the German pancake. Some of these are simple enough for the kids to make too!

Being the in-house food taster – uh, tough job but someone has to do it….ha ha! It’s all great, but the french toast is my fav – freagin’ awesome! The hash browns are also fantastic! Next up – Rick’s famous chili! – ha, ha! Well, maybe not so much, lol
