                    Marvelous Vegetable Minestrone

The gang that’s going into the pot.

Yes, I used fresh spinach. Time saver–use frozen. Lookie, I got a potato peeler! It’s the only reason I took this picture!


While I did my chopping I listened to Renee Olstead. 

Never heard of her? She sings old standards and is INCREDIBLE!

Everyone is washed, sliced, diced, and ready for the pot.

Sauté the onions until tender, then add the garlic cook for a couple of minutes.

Next everyone gets to hop in the pot and take a turn.

Add the water, pinto beans, seasonings, cover and simmer until the vegetables are tender

Top with some parmesan cheese!

Perfect for a chilly day….oh heck any day!!!

Marvelous Vegetable Minestrone

1 lg onion diced

4 cloves garlic minced

½ Lb green beans (frozen will work)

1 small zucchini diced

1 Lg potato peeled and cut into bite size pieces

1 C leeks diced

1 C celery diced

¼ Lb spinach (frozen will work)

28 oz can chopped tomatoes with juice

15 oz can pinto beans drained

1 ½ quarts water

2 Tbs salt

1 Tbs basil

½ tsp thyme

½ tsp pepper

2 Tbs olive oil

Parmesan cheese

Heat olive oil in large soup pot, sauté onion until tender, add garlic and cook for a couple of minutes. Add the rest of the vegetables and seasonings. Bring up to a slow boil. Lower heat cover and simmer 30 minutes or until everything is tender. Top with the parmesan cheese.
