Lasagna Mexican Style

 Lasagna Mexican Style

This is what you’re going to need. Don’t worry, I’ll give you the list of ingredients.

 There’s a bit of chopping to do, it’s worth it!

 

Brown the hamburger, drain and add the veggies, Ro*Tel and olives.

 

Half a cup of enchiladas sauce in the bottom of a baking dish and corn tortillas.

 

First layer is the burger mixture, then slice the Neufchatel cheese and arrange on the meat. Do two layers like this then top with corn tortillas, sauce and cheese.

Lasagna Mexican Style

1 lb lean hamburger

1 small onion

1 green onion

2 cloves minced

½ jalapeño — more if you like it hotter

½ orange bell pepper

2 Tbs cilantro

1 can Ro*Tel–whatever heat you like

1 3.8 oz can sliced olives

6 corn tortillas

½ teas oregano

salt & pepper to taste

1 C enchiladas sauce

2 8oz  pkg Neufchatel cheese

1 ½ C four blend shredded Mexican style cheese

Preheat oven to 350

Brown hamburger in large skillet. Dice the onions, bell pepper, jalapeño, and mince the garlic. When the hamburger is brown drain the grease, add the vegetables, Ro*Tel (don’t drain) and olives (drained)  Simmer for 15 minutes or until the veggies are tender.

Put ½ C of enchiladas sauce in the bottom of a 8 x 11 baking dish, place 2 tortillas on top. Layer half the meat mixture (avoiding the liquid) and 8 oz Neufchatel cheese sliced. Place 2 tortillas on top, layer remaining meat and sliced Neufchatel cheese. Top with 2 tortillas, spoon remaining enchiladas on top of tortillas and top if off with the shredded cheese.

Bake @ 350 until light brown and bubbly. 20 to 25 minutes then ENJOY!!!
