Crouton Chicken Bake

You are going to start with these ingredients. BTW—I love Mrs. Dash. I try to watch my salt intake and Mrs. Dash helps.

Season the boneless, skinless chicken breasts with Mrs. Dash, pepper and oregano.

Dredge in flour, shaking off excess.

Fry in vegetable oil until golden brown.

Lightly grease a 3 quart oven safe casserole dish, add the croutons.

Place the golden brown chicken on top.

Whisk together the Cream of Chicken soup and ¾ C chicken broth. Pour over the chicken and croutons.

Bake at 375* for 45 minutes or until the chicken is fork tender.

Crouton Chicken Bake

Serves 4

prep and cook time 1 hour

 

4 Small Boneless Skinless Chicken Breasts

1 5 oz package Seasoned Croutons (BIG Croutons not the little ones)

1 can Cream of Chicken soup

¾ C Chicken Broth

1 C Flour

2 Tb Vegetable Oil

Mrs. Dash

Pepper

Oregano

Heat a large skillet on medium add a couple tablespoons of vegetable oil. Season the chicken with the pepper, Mrs. Dash and the oregano. Dredge in the flour. Fry until golden brown.  Place the croutons in a lightly greased deep 3 quart baking dish. I used multi-grain croutons, I thought they would hold up better. They need to be the BIG size croutons too. Arrange the chicken on top of the croutons. Whisk together the Cream of Chicken soup and the chicken broth and pour over the chicken and croutons. Bake uncovered at 375* for 45 minutes or until the chicken is fork tender.
