Blueberry Cottage Cheese Pancakes

The first time I made these pancakes my sons looked at me like I was nuts, “cottage cheese in pancakes? EWWWWW!” That was before they took a bite and another and another and another. Even as my sons grew into men they would still ask for these.

After my sons moved out, weekend mornings it wouldn’t be uncommon for them to come over for breakfast and these HAD to be on the menu. I was always taken back to the first time I made them. That “EWWWWWW” moment. Give them a try and you’ll be hooked too!

Don’t forget to cook up a pound of bacon!!!! Oh….try baking the bacon on a cookie sheet in the oven @ 400, works great. You can even brush maple syrup on the bacon, super duper yummo!!

Blueberry Cottage Cheese Pancakes

Blueberry cottage cheese pancakes

1 1/4 c Flour
1/3 c Sugar
1 t Baking soda
1/2 t Salt
1 c Sour Cream
1 c Cottage Cheese
2 Eggs
1 ½ t Vanilla
1 ½ c Blueberries
Butter for the griddle

These cook best on a griddle. Tried cooking in a pan and it was an epic failure.

Whisk together the flour, sugar, baking soda and salt. Stir together the sour cream, eggs and vanilla. Add the flour mixture to the egg mixture. Gently fold in the blueberries.

Heat griddle to 350, melt butter each place your going to put a pancake. This needs to be done each time you put on a new cake. Cook until the pancake bubbles and the bubbles break. Flip that baby over!
